Stuffed Acorn Squash

3 acorn squash, halved, brushed with olive oil and baked cut side down at 425 for 20 min

I cup dried quinoa cooked according to package
1/2 cup feta cheese
1/2 cup roughly chopped toasted raw almonds
1/2 cup chopped fresh parsley
2 teaspoon red wine vinegar
2 Tablespoons olive oil 

Mix cooked quinoa with the 5 ingredients, and stuff in the halved hollowed out seeded roasted acorn squash.
